Black Eyes Beans Spread recipe here has been adapted from hummus recipe and offcourse have made few changes here and there, like skipping Tahini. That’s exactly why I did not call it hummus at first place . Adding Tahini will bring it more close to the hummus.

Coming to the spread I feel the fresh red pepper does a great job by giving the kick needed in otherwise plain hummus. Now you can use this as a dip or make sandwiches out of it and enjoy every bite. Dig in your Idlis into it and relish the taste of it too.

Infact simple vegetable sticks make it taste quite delicious too.

Ingredients

  • 1 cup Sprouted Black Eye Beans
  • 1 Red Pepper
  • 1 clove Garlic
  • 1/2 tbsp Lemon Juice
  • 1/2 tsp Flax Seeds Powder
  • 1 tbsp Extra Virgin Olive Oil
  • 1/2 tsp Salt

Instructions

    Smear some regular oil on the red chilli and roast it directly on the flame till the skin is charred well and then keep it dipped in regular water for few minutes.

    Boil the black eye beans with some salt and then transfer it in a mixer.

    Remove the skin of the pepper and chop it and put in the mixer. You can de-seed if you don't want it to be spicy.

    Next add some garlic, salt, lemon juice and 1 tsp of oil and make a paste of it.

    You might need more juice as per your taste and add the left over oil too and blend it again.

    At the end add the flax seeds powders and give it a nice mix with a fork and store it in air tight container.

    This will remain good for 4 to 5 days in refrigerator.
