Here is Dried Fig and Jowar Cookies which turned out super yummy. This was the first time I ever tried Fig in any of my recipes and interestingly loved it. Figs or Anjeer are loaded with dietary fibre, antioxidants and even minerals. It’s our own desi super food and should definitely be added in your kid’s diet.

You can offcourse eat it just like that but adding in cookie helps you to cut down on sugar too. As in this recipe I used this with dates . If you closely study the recipe the amount of ghee used is just enough to give it a nice bind and bring all the flavours together. These cookies won’t be very crispy instead they would be chewy and I love them like that. You can however add around 100 gms of butter/ghee to make these more crispier. Since for me cookies are something which my son loves eating almost daily, I tend to control ghee/butter as well. Not to mention we use ghee in other forms as well in our daily meals.

Having said that , these Dried Fig and Jowar Cookies just as the recipe suggests will keep you asking for more. Infact the mix of fig and cardamom is amazing. Using Jowar as a base flour also helped as I feel this flour does very well for baking as compared to other flours, at least for my family :)

Oh ya I will just update the recipe of Tarts which I tried with this same dough and they turned out to adorable too.

Ingredients

  • 1 cup Jowar Flour
  • 6 Dried Figs (Anjeer)
  • 10 Dates
  • 3 tbsp Ghee
  • 2 tbsp Chopped Almonds
  • 1/2 tsp Vanilla Essence
  • 1/2 tsp Cardamom Powder
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
  • 1/4 cup Milk

Instructions

    Soak Figs and Dates separately in water for an hour and then add in a mixer and make a thick grainy paste with 1 tbsp of water and vanilla essence.

    Now take a pan and heat 1/2 tsp ghee and add the mixture and start drying till all the little water it has it evaporates and it all comes together in dark brown stick lump. Let it cool now.

    Add baking soda, salt and cardamom powder in the jowar flour and sieve it once.

    Now to this add ghee and then sticky fig and dates mix.

    Slowly bring all the things together as you gently mix them all. Add almonds and milk to make a soft dough. Remember to mix them and not knead them or otherwise the cookies won't be crispy.

    Now keep the cookie dough covered in refrigerator for 5 to 10 mins as you prepare the oven by putting it on preheat.

    After that take out the dough and roll it up gently and use cookie cutter to give shapes. You can also use the dough directly to fill up the cookie cutter grooves and shape the cookies as desired.

    Now put these for baking at 180 degrees for 10 mins one one side and then flip for another 7 mins on the other side. Let it cool down before you enjoy these yummy dried fig cookies.
