Egg in Spinach Curry is a pure bliss and you can easily replace eggs with even broccoli or tofu but today I just wanted to keep it with eggs. Egg Curry is my favorite when not made with too much spices and keeping the content still more tasty.

Generally we use tomato based gravy , but thought to make it Spinach curry today and boy it turned out yum. I also make the Spinach curry a little different than I usually make. So it blanched everything together instead cooking them step wise. That was time saver as well added another taste. Also quality of spinach is very important and fresher and tender leaves certainly add more taste.

So how did you find this recipe, super healthy and rich in protein and iron and great for weight watchers too. I would highly recommend these for kids and they will certainly love this one.

Ingredients

  • 2 Eggs
  • 2 cups Spinach
  • 1 Onion Sliced
  • 4 cloves Garlic
  • 1 inch Ginger
  • 1 Green Chilli
  • 1 tbsp Lemon Juice
  • 1 tbsp Kasuri Methi
  • 1 tsp Cumin Seeds
  • 2 Cardamom
  • 2 Cloves
  • 5 Peppercorns
  • 1 tsp Salt
  • 1/2 tsp Turmeric Powder
  • 1 tsp Coriander Powder
  • 1 tbsp Jowar Flour

Instructions

    Boil eggs and keep it ready.

    Blanch spinach with onions, ginger, garlic, green chilli.

    Cool this and make a paste of it.

    Heat oil and add cumin seeds, cardamom , black pepper corns, cloves add spinach puree and cook it till it boils.

    Add 1 tbsp of Jowar flour and let it cook together and thicken. Add a little water and make curry out of it.

    Cut boiled egg and add into the spinach curry and add kasuri methi and lemon juice and serve hot with steamed rice.
