Garlic Egg Rice!! What is so special about it after all?

Well this is made with seasonal fresh garlic and with loads of garlic. I added some spinach too as that adds more green color as well as nutrition. Also Spinach goes very well with garlic. So this Garlic Egg Rice is full of flavour but simple at the same time. I would call it one pot meal considering rice is steamed separately though. Hardly any oil but again this is a good lunch meal with proteins, minerals and carbs. All those who are off carbs can excuse this recipe, I however don’t switch off myself from carbs fully. I believe everything is important and if eaten in balance portions with active life its good for us. Remember ACTIVE is the keyword here for the BALANCED DIET.

Coming again to Garlic Egg Rice, this is my goto when I have boiled eggs left from the breakfast and I want to enjoy some rice too. Adding tomatoes in this recipe of Garlic Egg Rice just allow it to be succulent for otherwise it can be dry, considering we are not using too much oil too. Try this recipe on a lazy afternoon and enjoy a wholesome healthy homemade meal.

Ingredients

  • 2 Boiled Eggs
  • 1 cup Steamed Rice
  • 1/4 cup Chopped Green Garlic
  • 2 tbsp Chopped Garlic
  • 1 Chopped Tomato
  • 1/4 cup Chopped Spinach
  • 1 Chopped Green Chilli
  • 1 tsp Salt
  • 1 tbsp Lemon Juice
  • 1/2 tsp Garam Masala
  • 1 tsp Oil
  • 1/2 tsp Cumin Seeds
  • 1 Bay Leaf
  • 2 tbsp Chopped Coriander

Instructions

    Heat oil and add cumin seeds, bay leaf and then chopped chilli, garlic and saute for 30 secs.

    Next add tomatoes and cook till they are tender and add salt to it.

    Add green garlic and spinach and cook on slow flame for a min till they are soft.

    Now add sliced boiled egg over this masala and top it up with steamed rice (I should be freshly prepared) and then sprinkle lemon juice, coriander leaves, some more green garlic and garam masala with very little salt (only for rice as masala already has salt) tightly close the lid and put off the flame after 3-4 mins. Let it sit for another 10 mins before you can mix it all together and serve.
