Litti Chokha is a typical poor man's food from UP and Bihar. Made with minimilistic ingredients the recipe is simple but extremely healthy.

Litti Chokha is something which always takes me back to my roots of Banaras.

I have spend countless weekends at our village near Banaras and lot many of them have memories of this scrumptious platter of Litti Chokha. These littis or baatis are prepared with lots of love and sattu suffed in them. The whole combination is so delicious and extremely healthy. The oil is in raw form while the other things are roasted, boiled or tempered. The food is heart of these two states UP and Bihar and for me this is home.

While I love experimenting with food and recipes but this is something which is so simple that you need not do any experiment. The chokhas too have more variety but these are three popular variants and trust me though the recipe is almost same but the base ingredients makes all the difference. This food is wholesome and extremely affordable too, hence it’s also called poor man’s food :)

Ingredients

  • 1 cup Whole wheat Flour
  • 2 tsp Ghee
  • 1 tsp Carrom Seeds
  • 2 tsp Salt
  • 1 tsp Baking Soda
  • 1/2 cup Sattu
  • 1 tbsp Lemon Pickle or any Pickle Masala
  • 2 cups Chopped Onions
  • 1 cup Chopped Tomato
  • 3 Tomatoes (Gas Roasted)
  • 3 Boiled Potatoes
  • 1 Brinjal (Gas Roasted)
  • 1/2 cup Coriander Leaves
  • 2 tbsp Garlic Chopped
  • 1 Lemon
  • 2 Green Chillies
  • 1 tsp Roasted Cumin Powder
  • 3 tbsp Raw Mustard Oil

Instructions

    First take a bowl and mix ghee , carrom seeds, salt , baking soda into whole wheat flour and mix well. Gradually add little water and knead a nice and soft dough and let it sit for 30 mins.

    Now grease a baking tray, preheat the oven for 10 mins.

    In a bowl add sattu, lemon pickle masala, salt, coriander, green chillies, finely chopped onions and garlic and mix well. At the end add a little lemon juice and stuffing is ready.

    Take small dough balls and stuff this sattu mix and roll them up again into balls and arrange on the baking tray and bake for 180 degrees for 25 mins and the change sides and bake for another 5 mins.

    For Chokha we would make three varieties; Aloo chokha is mash two boiled potatoes, add salt, green chilli, coriander, garlic and onions and if needed a little cumin powder . At the end mix 1 tbsp raw mustard oil and 1 tsp lemon juice and its ready.

    Baigan Bharta: Peel and mash the gas roasted brinjal and add chopped tomato, onions, garlic, green chilli, coriander, salt , lemon juice and 1 tbsp raw mustard oil.

    Tamatar Chokha: Peel and mash tomatoes , add one boiled potato (optional) add chopped, onions, garlic, green chilli, coriander, salt , lemon juice and 1 tbsp raw mustard oil.

    Once Littis are done serve them with Toor Dal and these three variety of Choka and the chutney.
