Moong Dal Cookies?? Sound weird for sure. The moment we think about cookies, our mind takes us to a world of sweet things and Moong Dal isn’t part of that world. Inspite of this , I gave Moong dal a fair chance for being part of my cookies and let me tell you the results were amazing.

While this cookie was inspired by Moong Dal Halwa , it is way lesser work and much lesser ghee too. Adding the type of fat in cookie is purely your choice, you can go ahead and try almond butter too. However I loved the combination of ghee with moong dal and jaggery or coconut sugar. The recipe is simple like most of my other cookies and you for sure would love it. However the taste which comes is from the combinations of ingredients and proportions.

I used coconut sugar instead of jaggery for a little sharper taste but you can try unrefined sugar as well. Again your choice. My family including senior citizens and kiddo loved it so much that I had to hide it so they don’t over eat. That also saves me for baking fresh batch not before 10 days. Even if its a healthy cookie, one piece per day is good enough or at max two for a kid who is active in sports, running , playing around etc. Remember balance is the key!

Ingredients

  • 3/4 cup Yellow Moong Dal
  • 2/3 cup Coconut Sugar
  • 10 Almonds
  • 5 Cashew
  • 5 Pistachios
  • 1/2 cup Milk
  • 1/4 tsp Saffron
  • 1/4 tsp Salt
  • 1/2 tsp Baking Soda
  • 1/4 cup Ghee
  • 4 Cardamom Pods

Instructions

    Soak moong dal for 2 hours and then drain the water and let it dry for 20 mins.

    Now heat a pan and add 1 tbsp ghee and all the soaked dal and saute it for good 15 mins on slow flame.

    Next cool it down and powder it in a mixer grinder. Also powder nuts along with cardamom too.

    In a bowl mix rest of ghee with coconut sugar and beat it till it become pale in color.

    Gradually add moong dal powder, baking powder, salt and nuts powder and mix in the ghee and sugar mixture. With hands mix all these together.

    Also heat milk with saffron in it and then gradually add milk too in the mixture. Milk will provide binding and just see that all the dough comes together.

    Pre heat over at 180 degrees and then grease a baking tray and make small balls with the dough and flatten them a bit and arrange on the baking tray.

    Bake these are 15 mins at 180 degrees and then turn them and bake for another 2 mins if its convection more. However in OTG turning isn't required.

    Let them cool before you serve these beauties to your kids and family.
