Palak and Sweet Potato, you must try this combination! It’s really tasty and make sure you dice the sweet potatoes evenly and cook them till they are light brown before you add spinach.

This gives sweet potatoes nice texture and you will enjoy every bite with spinach. This is a very simple way of cooking Spinach and you can’t go wrong with it. Since it doesn’t need lot of spices keeping it simple not just retains the over all taste but also nutrition. Generally we love Spinach with Paneer but then Iron and Calcium combinations aren’t really best choices however this combination comes very close to your palak paneer. If you want you can add some kasoori methi too, I however wanted to stick to pure spinach flavor and enjoy it.

Try this Palak and Sweet potato with simple roti or tandoori roti and you would make it again and again. Just for the ease of the recipe. Also do not over cook spinach , blanching just for 5 mins and then cooking with sweet potato for another 5 mins is all what is needed.

Ingredients

  • 1 cup Blanched Spinach
  • 1 Boiled Sweet Potato
  • 1 Chopped Onion
  • 3 cloves Garlic
  • 1 Green Chilli
  • 1 tsp Cumin Seeds
  • 1 tsp Cumin Powder
  • 1/4 tsp Turmeric Powder
  • 1 tbsp Lemon Juice
  • 1 tsp Salt
  • 1 tbsp Oil
  • 1 tsp Ghee
  • 1/4 tsp Garam Masala

Instructions

    Heat oil in a wok and add cumin seeds, green chilli and chopped garlic and saute for a min.

    Add chopped onions and saute till they are light brown and then add diced sweet potato and mix well with little salt and cumin powder and let it cook till its sides are light brown.

    Puree blanched spinach with little green chilli and couple of garlic cloves.

    Mix the spinach puree with sweet potato and cook them on slow flame.

    At the end just add little gram masala and lemon juice and mix well.

    Heat a little ghee and add garlic and then temper the spinach from top.
