Paratha Veg Pin Wheels is one of the easiest recipes , I could think off. So my son was as usual demanding something interesting and I was clueless like most of you. Then I saw some Red Beans Hummus sitting in my refrigerator and offcourse his favorite vegetables with Paneer.

And then it was as simple as a wrap!!

Infact most of the healthy choices are simple and easy , however making them tasty depends on your creativity and a bit of twist from the regular recipes. This one recipe of Paratha Veg Pin Wheels worked well for me and I am sure will work for you too.

Ingredients

  • 1 cup Chapati Dough
  • 1 cup Boiled Rajma
  • 2 cloves Garlic
  • 1 tsp Cumin Powder
  • 1/2 tsp Black Pepper
  • 1/2 tsp Chilli Flakes
  • 1 tbsp Lemon Juice
  • 1 tbsp Extra Virgin Olive Oil
  • 1/2 cup Green Bell Pepper Julienes
  • 1/2 cup Carrot Julienes
  • 1/2 cup Paneer Strips
  • 1/2 tsp Oregano Seasonings
  • 1/2 tsp Salt
  • 1/2 tsp Sesame Seeds

Instructions

    First of all make a hummus of rajma or red beans by adding Rajma, garlic, black pepper, chilli flakes, oregano , salt in a mixer and make a paste.

    Add little olive oil and lemon juice to balance the texture and adjust the seasonings to the taste and keep aside.

    Lightly roast paneer in a pan with some salt and black pepper and cut in strips and keep along with bell pepper and carrot.

    Take the roti dough , here I have used Beetroot mixed dough , you can use spinach or a regular atta dough itself and roll a paratha and cook on the girdle.

    Once cooked both side transfer it on a plate and put the ghee and then spread the hummus evenly.

    Now put the vegetables and the paneer at one side of the roti/parata and roll it up tightly and then use a foil to pack the roll to it stay tight for some time.

    Keep in fridge for 5 mins and then open the foil and cut the rolls into small discs like pieces.

    Garnish with sesame seeds and serve.
