So I had to make Tutty Fruity Cake but then I saw some left over Thandai Powder I made for Holi and that’s how Tutty Fruity Thandai Cake came in picture. While it baked my house smelled heavenly and no wonder why people love Thandai Cakes. So incase you don’t have Thandai, you can skip it and make regular Tutty Fruity Cake.

Also what is interesting about this cake is that it doesn’t take much of oil and the moisture comes majorly from yoghurt. Then the sweetness is coming from Organic jaggery powder and you can control the quantity too. So its important that you understand the proportion of wet and the dry ingredients and then replicate the recipe accordingly.

This Tutty Fruity Thandai cake goes well as a tiffin snack or even works well with a cup of milk for kids. I infact loved having this with some tea. So full desi combination and it went so well together. You can try this recipe during festivals specially holi as a fusion recipe. I had to make this before Holi but then got too busy to do so.

Ingredients

  • 1 cup Whole Wheat Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
  • 1/2 cup Oil
  • 1 cup Yoghurt
  • 3/4 cup Jaggery Powder
  • 1/4 cup Thandai Powder
  • 1/4 cup Milk
  • 1/4 cup Tutty Fruity

Instructions

    Mix baking soda, baking powder and salt in whole wheat flour and sift it min 4 times.

    Now put the oven on pre heat mode and in a deep bowl add oil and curd and mix well.

    Next add Jaggery powder and mix till its all even.

    Late add Thandai powder and mix well. Then gradually mix the wholewheat flour.

    As you mix flour in the oil mixture fold it all with the spatula , remember not to beat the batter.

    Use little milk is batter gets too dry. Remember it won't be runny but medium thick.

    Add Tutty Fruity and gently mix it well too.

    Now grease the baking dish and pour the batter in middle and then tap it so it spreads evenly.

    Sprinkle more Tutty Fruity on top and put it in over to bake at 180 degrees for 25 mins. Do a quick toothpick test and if its clean then the cake is done.

    Let the cake sit in oven for another 10 mins before taking it out and demoulding it and serving it.
