Wholewheat Nuts & Dates Cake is finally on my website. Phew! Till date the best ones I have had is only from Wholesome Bakes run by Sakshi Gujrati. If you say in Navi Mumbai and have not had her Walnut and Dates cake, you are missing something.

Anyways since during the lockdown, we really were craving for this combination and my family wanted to relish this too, I made an attempt. Could not replicate the taste but it did turn out great on my personal scale. A very simple recipe which is like just mix and let it bake types if you follow all the steps needed to bake a healthy cake. Personally I follow few basic steps and then keep changing the ingredients to experiment more.

Coming to this Wholewheat Nuts & Dates Cake again, this cake is kind of nuts overload too. But you can choose to make that variation as well, in-fact hazelnuts would be a good add on. Dates being quite sweet you do not need any sugar at all and hence this version is mildly sweet. Also I tried to limit soaking the dates in milk and instead soaked in water, so that is again your choice.

Ingredients

  • 1 cup Wholewheat Flour
  • 1/2 cup Oil
  • 3/4 cup Yoghurt
  • 4 tbsp Milk
  • 25 Dates
  • 10 Almonds
  • 10 Walnuts
  • 1/4 tsp Vanilla Essence
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/8 tsp Salt

Instructions

    Deseed all the dates and soak it into water for 15 -20 mins and then drain the water and puree it in a mixer along with vanilla essence.

    Lightly roast the nuts and slice / chop them coarsely.

    In a bowl mix whole wheat flour, baking powder, baking soda and salt and sift them four to five times. This process help in even mixing of all the dry ingredients.

    At this point put the oven for pre-heating at 180 degrees for 10 mins.

    Take a deep bowl and add oil and then curd and mix it well till its all uniform.

    Now add the dates puree and mix it till it uniformly done.

    Gradually two to three spoons at a time start folding the dry flour mix in the wet now.

    The batter would become thick but when you find it difficult to fold add two tbsp of milk and keep folding. Do not over mix but only till you fold everything in the batter together.

    Now at this point you would have a lump of batter , add half of your nuts and gently fold them too.

    Take a greased pan, I took a rectangular tin but you can take any of your choice.

    Pour the batter in the centre of the pan and then tap it up so its evenly spread. By now your oven would be ready.

    You can then sprinkle the other half of nuts over the batter and put this in the oven.

    Bake the cake at 180 degrees for 35 mins straight and once its done then do a toothpick or a knife test. If its clean let the cake sit in the oven for another 10 mins before you take it out to cool down. Otherwise bake for another 5 to 10 mins. Most likely you would not need to bake it over 35 mins.

    Once it cools down nicely slice it and serve.
