Zucchini in Basil Sauce is my quick fix when I crave for Thai food but am lazy to make.

Ha ha the combination of coconut milk and basil works for me. The taste offcourse is quite different but it still satisfies my craving. However you would as it is love this with plain steamed rice and with some red chilli flakes it gets the right spiciness too.

What I love about this combination is how they compliment each other. Plain, steamed rice absorbs the taste of the gravy and zucchini is chunky enough to come in every bite. You can add more red /green chilli incase you want it more spicy. This is how I loved it along with the family.

Ingredients

  • 1 Zucchini
  • 1 Tomato
  • 2 tbsp Garlic chopped
  • 2 Garlic Cloves
  • 6 Basil Leaves
  • 2 tbsp Coriander Leaves
  • 1 Green Chilli
  • 1/2 cup Coconut Milk
  • 1 tsp Lemon Juice
  • 1 tsp Black Pepper
  • 1/2 tsp Chilli Flakes
  • 1 tsp Salt
  • 1 tbsp Olive Oil

Instructions

    Take a blender and add basil leaves along with garlic, coriander, green chilli and with some water and make a paste.

    In a wok heat oil and add chopped garlic and then toss diced zucchini and saute it for a min on slow. Then add diced tomato cubes and mix well.

    Now add black pepper, chilli flakes a little salt and then add the basil paste and mix well.

    Next pour the coconut milk and mix it well and let it bubble up once.

    At the end adjust the seasonings put off the flame add some lemon juice and serve hot with steamed rice.
